Bodiam Castle.
HOW TO GET THERE
Go to Rye, and take the bus to Bodiam Castle. I went hitchiking with a friend, but I do not recommend doing it alone. However, people in the area were extremely nice and hospitable. There is no easy train access and the bus schedule changes very often, so you should check travel details in a tourist information office in Brighton. But don't believe them if they say it is walking distance from a train station... (it isn't unless you are planning to do some camping.)

"A friend visiting me had never seen a medieval castle in his life. We had very little money and time, so we found the most medieval looking castles near Brighton. We headed towards Bodiam thinking that we could walk from the nearest train station. People laughed .... because by foot it would take at least 5 hours. After about one hour, we decided to hitchhike and thanks to a lovely couple we were there quite quickly. The landscape near the castle is lovely.
